The Little Cheese Farm milks 75 Jersey cows and 75 Friesian Holstein cows every day. The characteristics of the milk from both cow breeds are different.
For instance, the milk from Jersey cows is yellower and thicker than that of Holstein cows because it contains more carotene, fats and proteins.
Certain cheeses are made with Jersey milk, others with Holstein milk and this depends on the cheese recipe. There are also cheeses for which we use mixed milk. By managing our own dairy herd, we can enjoy the best milk all year round for the production of our farmhouse cheeses. Moreover, the milk we use is daily fresh and therefore never older than 24 hours.
All this is reflected in the typical and excellent taste of our East Flanders farm cheese. Our operational management also fits perfectly within the "Short Chain Principle" and is therefore also better for our environment.
